The Simplicity Of The Breakfast Burrito

One of my favorite things to make for my first meal of the day is the breakfast burrito. It is so simple and to be honest with you one of the best ways to fuel your body after a good workout at the gym. I mention that workout part because that has been my routine for the last couple of years to hit the gym first thing in the morning come home and load up with a protein fruit smoothie and yummy breakfast burrito.

My standard recipe is either a whole wheat tortilla or one of those low carb one’s which both tastes great by the way. Then I usually start off with two pieces of bacon in the pan and then crack two eggs right onto bacon after it has cooked on one side and flipped. Then I flip the egg/bacon combo and let it cook on the other side. Meanwhile I am adding my favorite cheese usually what ever we have in the house and some spinach leaves, I love me some spinach! Place the egg/bacon combo on top of that and wrap it up, sometime I will add a little salsa  or some other leafy vegetables.

I have even tried it with some roasted red pepper humus instead of cheese and that is pretty good as well. So there you have it my friends my recipe for my simple breakfast burrito.
